Course Description
This course familiarizes the reporter with the labeling laws that govern packaged foods sold in interstate commerce. It begins with a historical overview of food safety policies it the U.S. and the development of the FDA and its role in food safety. The course covers the evolution of food safety laws including the Nutrition Labeling and Education Act of 1990. The reporter will learn which organizations have jurisdiction over different types of foods: fresh, packaged, sold locally, sold in interstate commerce, imported, etc. Food labeling information that is mandatory and voluntary is presented, and the reporter is taught how to effectively use the food label.
